Rhubarb Sauce

This is one of my favorite summer treats!  My mom made this when I was growing up and it was so good I would eat it all on it's own, but it's delicious served over vanilla ice cream.

  • 1 tablespoon unsalted butter
  • 3 cups thinly sliced rhubarb (about 6 stalks)
  • 1/3 cup white sugar
  • 1/4 tsp. pure vanilla
  • in large skillet, melt butter over medium-high heat
  • stir in rhubarb, sugar, and vanilla
  • continue to cook, stirring constantly, until tender, 5-10 minutes
  • serve warm over vanilla ice cream
